Blackened Salmon with Cajun Spices


Blackening spiced fish is at the core of many traditional Cajun recipes. The exact blend of herbs and spices may be a family or restaurant secret. Here's a recipe that will make your mouth water just thinking about it.

Preparation time: 5 minutes Cooking time: 2 to 3 minutes pan frying plus baking time (20 minutes approx.)

Preheat oven to: 400 degrees
Ingredients:
2 tsp. salt
1 tsp. cayenne pepper
1 tsp dried oregano
4 tsp. fresh thyme leaves, chopped
1 tsp. fennel seeds, crushed
1 tsp. sweet paprika
1 tsp. fresh ground black pepper
2 Tbsp. olive oil1 Tbsp. butter
4 x 6oz approx. salmon fillets (remove skin and bones)

Cooking Method
Combine the salt, cayenne pepper, oregano, thyme, fennel seeds, sweet paprika, and black pepper together in a bowl.
Run the salmon fillets all over with one of the tablespoons of olive oil.
Take the spice mixture and press firmly into the top of each salmon fillet. Make sure you don't miss any bits.
Heat a large, heavy pan quickly until very hot.
Coat the hot pan with the other tablespoon of olive oil.
With the spiced side down, place the fillets in the pan. Add the butter.
Cook until the spices turn dark brown. This will take 2 to 3 minutes. Do not move the salmon during cooking.
Place the salmon fillets, seasoned side up, on a baking sheet. Place in the preheated oven.
Bake this salmon until it is cooked through (even color to the center) or as you would like it. Some people like this dish very well cooked. Serve this dish with steamed vegetables and iced tea for a healthy meal perfect for lunch or dinner.

Hey I took the quiz to the right and it said I needed to "thaw out". Wow. Seems I am a realist. I don't think that is a negative thing, do you?
